Vegetable Soup Recipe


This soup recipe can be vegetarian if desired.


Ingredients:

1 Cup Onion, diced

1 Cup Carrots, sliced

3 Garlic Cloves, minced

1 Cup Beans (kidney, green, lentils or lima)

1/2 tsp. Dried Oregano

1 tsp. Dried Basil

3 Cups Green Cabbage, diced

1/2 tsp. Salt

6 Cups Broth (beef, chicken or vegetable)

4 Tbsp. Tomato Paste

Olive Oil


Directions:

In a large pot, sauté the onions, carrots, and garlic with olive oil for 5 minutes over low heat.


Add in the beans, oregano, basil, cabbage, salt, broth, and tomato paste and bring it to a boil.


Lower the heat and let it simmer, covered, for 15 to 20 minutes.


You can also add, if desired 1 zucchini (chopped), 2 potatoes (diced), a cup of frozen corn, cilantro, or 1 jalapeño.  If you add potato, you might need to cook it a bit longer to get the potatoes tender.
