Tomato Basil Soup Recipe
Here’s a delicious tomato basil soup recipe. You won’t be disappointed.
Ingredients:
6 1/2 lbs. Plum Tomatoes, cut in half lengthwise
1/4 Cup Extra Virgin Olive Oil
1 Tbsp. Extra Virgin Olive Oil
1 Tbsp. Kosher Salt
1/2 medium Onion, chopped
1 large Garlic Clove, minced
1 tsp. Red Pepper Flakes
2 Cups Fresh Whole Basil Leaves
1/2 tsp. Dried Thyme
Preheat the oven to 400 degrees F.
Directions:
Place the cut tomatoes onto a 10 x 16” baking sheet and drizzle on 1/4 cup of olive oil and the salt. Toss the tomatoes with your hands until they are evenly coated, and arrange them cut side up. Roast in the oven for 50 minutes, then remove the pan and set them aside.
In a large saucepan over medium heat, warm 1 Tbsp. of olive oil, and add the onion, sautéing for 10 minutes. Then add the pepper flakes and garlic, and sauté for another minute. Pour in the tomatoes will their juices. Add 1 cup of water, thyme, and the basil and let simmer for 15 minutes. Then remove from the heat.
Puree the soup in batches in a blender, then pour into a clean saucepan straining as you go. Serve hot with crackers or breat.
