Split Pea Soup Recipe


It might take a while to make, but it’s super easy to make and unbelievably tasty.


Ingredients:

2 Tbsp. Butter

2 Tbsp. Olive Oil

3 Slices Bacon

1 medium White Onion, diced

2 Stalks Celery, diced

2 Carrots, diced

1/2 tsp. Hot Pepper Flakes

2 Garlic Cloves, chopped

Salt

1 Bay Leaf

2 Cups Split Peas, washed and drained


Directions:

In a large pot, sauté the butter, olive oil, and bacon until it’s slightly transparent.


Add the onion, celery, carrots, hot pepper flakes, garlic, and a pinch of salt.  Stirring occasionally, sauté on low-medium heat for 15 minutes.


Add the bay leaf and peas, and pour on enough cold water to cover the peas and bring it to a low simmer.


Cover the pot, checking every 15 minutes to make sure the peas are still covered, adding water if necessary.  Let the soup cook for 2 hours.


Puree the soup in a blender, and season with salt and pepper to taste.

Cook Time:  2 hours and 30 minutes
