Seafood Creole Gumbo Recipe


Here is an authentic Creole dish, very good, and very easy to make.


Ingredients:

1 large Onion, chopped

1/2 Green Pepper, chopped

1 Garlic Clove, chopped

2 Tbsp. Vegetable Oil

2 Tbsp. Flour

1 (15 oz.) can Stewed Tomatoes

1 (6 oz.) can Tomato Paste

2 tsp. Salt

1 Bay Leaf

1/2 tsp. Chili Powder

1/2 tsp. Basil Leaves

1 lb. Trout Fillets

1 package Frozen Okra, sliced

1/2 lb. Redfish Fillets

3 Cups Water

1 Tbsp. Worcestershire Sauce

3 Cups Hot Cooked Rice


Directions:

In a Dutch oven, add the oil and sauté the green pepper, garlic, and onion.  Stir in the flour, making sure to blend well.  Add the tomato paste, stewed tomatoes, bay leaf, chili powder, salt, basil leaves, Worcestershire sauce, and water, and let simmer, covered for 30 minutes.


Remove the bay leaf, and add the okra and fish, cover the oven again, and let it simmer for another 10 minutes.


Serve in soup bowls over hot rice.
