New England Clam Chowder
This deliciously creamy concoction is a fan favorite anywhere.
Ingredients:
1 Tbsp. Butter
1 Cup Celery, diced
1 Cup Onion, diced
1/2 Cup raw Bacon, diced
1/2 tsp. Garlic, finely chopped
1/2 Fresh Thyme, finely chopped
2 Bay Leaves
3 1/2 Cups Sea Clams, chopped
1/2 Gallon Clam Juice
1 Cup Butter
1 Cup Flour
1 Cup Cooked Potato, diced
2 Cups Heavy Cream
Salt and Pepper to taste
Directions:
In a large pot, melt the Tbsp. of butter and sauté the onion, celery, and bacon, being careful to not brown the bacon. Add the thyme, bay leaves, garlic, clams, and clam juice and bring it to a boil.
In a medium skillet, melt the cup of butter and add the flour, letting cook for 5 minutes. Pour the butter/flour mixture into the boiling clam mixture, constantly stirring until it’s thickened. Add the heavy cream, potato, salt and pepper to the pot and let simmer for 15 minutes.
