Minestrone Soup Recipe
This is a great crock-pot recipe. Just throw in all the ingredients, and leave it to do all it’s own cooking.
Ingredients:
16 oz. Canned Stewed Tomatoes, cut in pieces
2 medium Onions, chopped
2 Garlic Cloves, crushed
1 Cup Carrots, diced
1 large Zucchini, thinly sliced
16 oz. Canned Kidney Beans
6 oz. Canned Tomato Paste
1 Tbsp. Parsley Flakes
2 tsp. Salt
1/8 tsp. Finely Ground Black Pepper
6 Cups Vegetarian Broth, beef style
1/4 lb. Spaghetti, cut into 2” pieces
1/2 tsp. Ground Sage
1 tsp. Dried Basil, crushed
2 Cups Shredded Cabbage
Ingredients:
Place all the ingredients into a crock-pot/slow cooker except for the spaghetti, stir together, and cover. Turn the heat to low, and let it slow cook for 10 to 12 hours.
Add the spaghetti to the crock-pot, and cover again and let cook for another hour.
Yield: 6 servings
