Lentil Soup Recipe


This is a great vegetarian friendly soup, it’s great to try something different.


Ingredients:

1 tsp. Vegetable Oil

1 Carrot, sliced

1 Onion, diced

1 Cup Dry Lentils

4 Cups Vegetable Broth

1/4 tsp. Dried Thyme

2 Bay Leaves

Dash Salt

1/4 tsp. Pepper

1 Tbsp. Lemon Juice


Directions:

In a large pot, add the vegetable oil and sauté the carrot and onion for 5 minutes, or until the onion turns clear.


Add the lentils, vegetable broth, thyme, bay leaves, salt, and pepper, and reduce the heat to a simmer.  Cover the pot and cook for 45 minutes, until the lentils are soft.  Remove the bay leaves.
