Boston Clam Chowder Recipe
This is a tasty and fast soup dish, it only takes about 25 minutes to make!
Ingredients:
4 Slices Bacon
13 oz. Clams, minced and drained
1/3 Cup Onion, chopped
1 1/2 Cups Potatoes, peeled and diced
1/2 Cup Milk
2 Tbsp. Flour
1 Cup Cream
1/2 tsp. Salt
1/4 tsp. Pepper
Oyster Crackers
2 Tbsp. Butter
Directions:
In a 2 Qt. casserole dish, place the bacon and cover and microwave for 4 to 5 minutes, until it’s crisp. Remove the bacon, crumble it up, and set it aside.
Drain the clams and add the clam liquid to the bacon drippings in the casserole. Stir in the onion and potatoes; cover the casserole and microwave on high for 9 to 12 minutes, until the potatoes are softened.
In a bowl, pour half of the milk and stir in the flour. Add this flour mixture, the remaining milk, clams, cream, salt, and pepper to the casserole. Cover and microwave for 4 to 5 minutes.
Garnish with oyster crackers, butter, and crumbled bacon.
