Baked Potato Soup Recipe


This is a fantastic hearty soup.


Ingredients:

1 medium Garlic Clove, 1/4" cut off top

6 large Baking Potatoes, rinsed & pierced once with a fork

4 1/2 Cups Chicken Broth

1/2 tsp. Ground Pepper


Toppings:

Crumbled Cooked Turkey

Bacon

Shredded Low-Fat Cheese

Low-Fat Sour Cream

Scallions, minced


Preheat the oven to 400 degrees F.


Directions:

Wrap the whole garlic bulb tightly in foil.  Put the garlic and the potatoes in the oven.  Bake for 45 minutes, then remove the garlic and let it cool.  Continue baking the potatoes for another 15 minutes.


Squeeze the pulp out of the garlic into a 4 qt. pot.  Peel 3 of the baked potatoes into the pot and mash until nearly smooth.  Slowly stir in the chicken broth, then add the pepper.


Over medium heat, place the pot and stir occasionally.  Cut the 3 remaining potatoes with the skin into 3/4” pieces.  Stir the pieces into the soup and cook until it’s heated through.


Serve with your choice of toppings.
