Bacon Potato Soup Recipe
Now this is a man’s soup, because bacon makes everything better.
Ingredients:
28 oz. Chicken Broth
1 medium Onion, finely chopped
3 Russet Potatoes, peeled & cubed
1 tsp. Dried Thyme Leaves
6 strips Bacon, cooked and crumbled
1/2 Cup Cheddar Cheese, shredded
Directions:
In a Dutch oven, combine the broth, onion, potatoes, and thyme and bring it to a boil over high heat.
Reduce the heat to medium-high and boil for 10 minutes.
Add the crumbled bacon, and let it simmer for 3 to 5 minutes. Season to taste with salt and pepper, and serve with cheese on top.

Cook Time: 30 minutes
Yield: 4 servings
